The mid palate offers rich cassis and black currant fruit flavors interwoven with hints of chocolate, vanilla and black pepper. This Phenomenal wine is rested in barrel for 21 months and monitored but generally left to its own devices. The winemaking philosophy is, and always has been, to preserve the very distinct vineyard character and fruit purity along with support from new but low impact French oak. The wine was both aged in barrel and subsequently bottled with minimal sulphur. Limited.

A Bordeaux Blend using the classic varieties of Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot. These vines were planted on carefully selected sites and took 9 years to reach maturity. The grapes were fermented whole with native yeasts and left for 5 weeks on their skins. The wine was then barrel aged for two years followed by four years of bottle maturation. This wine, rich, classic and complex, truly is a work of time. It will age well for up to 10 years.

This 2009 vintage was excellent - a fine example of benchmark Clare Valley Cabernet Sauvignon with mulberry and red fruits, dusty tannins and subtle oak. Hand picked grapes from 80 year old dry grown vines were used to craft this estate grown wine which was matured in French oak barriques for 24 months. An elegant style, with fine acid and longevity in the bottle.

Mouchão is a full, deep coloured wine with its concentration and spiciness of the Alicante Bouschet combined with the elegance of the Trincadeira and a tannic structure.
Beautiful violet colour of medium concentration. While young, is restrained in the aroma, with profoundly mineral aromas, tense and with very soft floral aroma. Well integrated wood, bringing some good smoked and iodized notes. Good volume in the mouth, with determination and with tannins that recall the schist. Acidity and fruit well combined. Long and fresh finish. A wine that will grow a lot in the bottle, although it already has a good balance.
Unanime has an intense cherry-red colour, elegant aromas of chocolate and tobacco, along with a touch of black pepper and some eshy notes. Well structured, with round tannins that blend nicely with its fresh, juicy acidity.
