A complex and thoughtful Sauvignon Blanc, wild fermentation, oak aging and extended lees contact adds breadth and texture, backed by juicy citrus, wet stone and chalky flavours and crystalline acidity.
This Pinot Noir has a deep dark plum colour with a brooding nose of dark cherry, raspberry, leather, fennel and spices. The complexity of the nose leads beautifully into the detail of the palate – with chalky tannin's and a long thread of acidity pushing through a long mouthfeel. Ripe cherry and red berry, savoury oak and a distinct minerality coat the wines structure core.
A refreshingly dry Pinot Gris with great concentration. Attractive aromas of fresh apricot mingle with fresh fig. The palate is full of rich flavours of quince that lead to a salty minerality on the finish.
The nose has a remarkably complex nose of honey, smoke and gravel. There are genuine ‘sauvage’ characters in there as well as both green fruit and tropical fruit characters: pineapple, guava and gooseberry are all present. The nose carries to the palate which is full, rich and complex. The palate shows both primary and secondary characters. It has a lovely creamy texture and good length.

Palate: Intense yet beautifully balanced with baked plums and spice. The fruit is supported by fine grain tannins and integrated acidity with lovely flesh and fruit singing on the finish.

Tension filled with a chalky nature, tropical and stone fruits are interwoven throughout the palate. This finishes dry with long driving fruit-laden acidity.
This is an aromatic wine reflective of the growing site with intense mineral characters, lime, citrus, lemon zest and melon, with a hint of nettle. The palate displays great minerality, with fresh fruit, good depth and intensity.

This Phenomenal wine is rested in barrel for 21 months and monitored but generally left to its own devices. The winemaking philosophy is, and always has been, to preserve the very distinct vineyard character and fruit purity along with support from new but low impact French oak. The wine was both aged in barrel and subsequently bottled with minimal sulphur. Limited.
